Tofu Watercress Salad

Ingredients
- 1 block tofu
- Salmon or tuna (1 large can salmon or 2 cans tuna – optional)
- 1 med. onion, sliced
- 2 tomatoes, chopped
- bean sprouts, parboiled
- 1 bunch watercress, chopped
- ½ cup shoyu
- ¼ cup salad oil
- 1 tbsp. Mirin
- 1 tbsp. sesame oil
- 1 tbsp. sesame seeds
Instructions
- 1In a large serving dish cube tofu in center, add salmon or tuna over tofu (if using).
- 2Sprinkle onion, bean sprouts, watercress, tomatoes.
- 3Combine all the ingredients for the sauce and mix well.
- 4Pour sauce over salad and garnish with green onions. Enjoy!!!
Notes
This is a great light salad full of flavor and unique in texture! Salmon or tuna is optional. Garnish with green onions.

Here's Papa Bismark showing off his salmon in his new kitchen that made in the basement of their Bellevue house in Washington. When Papa was in the Coast Guard he’d bring home lots of salmon for Grandma to cook with, I’m sure she was happy with feeding a family of 8!
